Ingredients
- 300g of dried fruit (sultanas* and raisins*)
- 50g glacé* cherries*, halved* zest* and juice of 1 lemon
- 225ml cold black tea
- 1 egg
- 100g brown sugar
- 250g flour
- 1 sachet* of baking powder
- 2 teaspoons* mixed** spice
** “Mixed spice” is a mix of ginger*, nutmeg*, cinnamon* and cloves*.
Method
- Put the dried fruit, glacé cherries, lemon zest and juice in a bowl. Add the cold black tea. Stir, cover and leave overnight.
- The next day, line a loaf* tin and grease it with some butter. Preheat the oven (190°C).
- Beat the egg in a bowl and add it to the fruit and tea mixture.
- Add the sugar to the mixture. Mix well.
- In another bowl, sieve* the flour, baking powder and mixed spice. Add this to the wet mixture and stir well, but try not to crush the fruit.
