On 28 January, it’s Blueberry Pancake Day in the Usa. It’s the perfect occasion to try this traditional American breakfast, don’t you think?

Ingredients (for 5 pancakes)
- 150 g flour
- 50 g sugar
- 1/2 sachet baking powder
- Pinch of salt
- 1 egg
- 250 ml milk
- 1 tablespoon vegetable oil
- 150 g fresh or frozen blueberries (defrost and drain on kitchen paper)
Method
In a large bowl, mix the flour, sugar, baking powder and salt.
Add the egg, the milk and the vegetable oil. Mix well.
Gently fold in the blueberries.
Heat a buttered frying pan. When it is hot, pour a small ladleful of batter into the middle (but don’s spread it).
Let the batter cook until small bubbles appear on the surface. When all the bubbles have burst turn the pancake over and let it cook on the other side until golden.
Serve warm with butter and sprinkled with some blueberries and a little sugar.
